Strawberry Jam Muffins

Ingredients to make Strawberry Jam Muffins

  • Wholewheat flour 3/4 th cup
  • All purpose flour 3/4 th cup
  • Milk 3/4 th cup
  • egg 1
  • oil 1/4 th cup (I used Canola oil)
  • Palm sugar 1/4 th cup
  • lemon zest 1 tsp
  • Strawberry Jam or Marmalade 1/2 cup
  • cinnamon 1/2 tsp
  • Vanilla extract 1 tsp
  • baking soda 1/2 tsp
  • Baking powder 1 1/2 tsp

How to make Strawberry Jam Muffins

  1. Preheat your oven at 170 C. Brush your muffin tray with oil and keep aside.
  2. In a bowl, sieve all the dry ingredients except sugar and mix them well.
  3. In another bowl, add sugar, oil and mix till sugar is combined. Then add egg and whip it till it doubles.
  4. Next add milk and vanilla and mix till sugar is completely dissolved.
  5. Now fold in the flour in batches. Lightly fold till everything incorporates. Do not over mix.
  6. Add your strawberry compote/jam. Do not mix it all the way. Just gently make swirls.
  7. Pour the batter in muffin tray cavities. Fill 3/4th of it.
  8. Then bake for 15 to 17 minutes or till toothpick inserted at the centre comes out clean
