Gongura Pickle

Ingredients to make Gongura Pickle

  • garlic - 5 cloves
  • Red Chillies - 10 to 15
  • mustard seeds - 1/2 tsp
  • urad dal - 1/2 tsp
  • Gingelly oil - 50ml
  • Gongura leaves - 1 Bunch
  • asafoetida - 1 pinch
  • tamarind - a little
  • sesame seeds - 1 tsp
  • coriander seeds - 1 tsp
  • salt - As required

How to make Gongura Pickle

  1. Wash gongura leaves and spread it on a clean cloth. Allow it to dry for few minutes.
  2. Heat pan and add oil in it. Add red chillies, garlic, coriander seeds, urad dal, sesame seeds and saute it for a while. Switch off the stove and allow these things to cool down.
  3. Add oil in a pan and add gongura leaves. Saute it untill leaves become pulpy.
  4. Mix everything along with tamarind and salt in a mixer jar.
  5. Finally add tempering. Heat pan and add oil, mustard seeds and asafoetida. Pour this in the gongura mixture.
