ABOUT Gongura Chicken RECIPE

Gongura or Sorrel leaves are good source of carbohydrates, fiber and protein. They are excellent source of vitamins A, B1, B2, B9 and C. It is rich in essential minerals like calcium, potassium, phosphorus, magnesium and iron. It very popular and commonly used in southern and western part of India. Basically these leave are used to make yummy and delicious Pickle. But they are also used in non vegetarian delicacy too. In Jai Ki Rasoi Se it is used made "Gongura Chicken"

Ingredients Serving: 10

  1. Chicken - 1 Kg
  2. Sorrel Leaves (Gongura) - 10 Bunches
  3. Finely Sliced Onions (Kati Pyaz) - 1 Cup
  4. Slit Green Chillies (Kati Hari Mirch) - 6 to 8
  5. Ginger & Garlic Paste (Adrak Lasoon Paste) - 1 Table Spoon
  6. Red Chilli Powder (Lal Mirch Powder) - 1 Table Spoon
  7. Turmeric Powder (Haldi Powder) - 1 Tea Spoon
  8. Coriander Powder (Dhaniya Powder) - 1 Table Spoon
  9. Cumin Powder (Jeera Powder) - 1 Tea Spoon
  10. Chicken Masala Powder) - 1 Table Spoon
  11. Black Cumin Seeds (Shahi Jeera) - 1 Tea Spoon
  12. Finely Chopped Green Coriander (Barik Kata Hara Dhaniya) - 1 Bunch
  13. Oil - As per your requirement
  14. Salt to taste

Instructions

  1. Heat 2 table spoon of oil in non stick pan or kadai. Once the oil is hot add slit green chillies and sorrel leave. Mix can cook till the leaves become tender. Keep it aside to cool down
  2. Add the cooked sorrel leaves and slit green chillies in a mixer jar. Make a fine paste and keep it aside
  3. Heat in the same non stick pan or kadai. Once the oil is hot add black cumin seeds and all them to crackle. Add ginger garlic paste and cook till the moisture from the paste gets evaporated
  4. Add finely sliced onion and cook it till they become translucent or light brown
  5. Now add chicken, ensure the flame of the gas is on high. This will help the chicken to release it juice. Cover and cook it till it become soft
  6. Add all dry ingredients like red chilli, turmeric, coriander & cumin powder and chicken masala. Mix all the ingredients and cook till oil gets separated. Season it with salt according to taste
  7. At this stage add the paste of the sorrel leave. Mix and cook on low flame for 10 minutes or till the chicken is completely cooked
  8. Finally add finely chopped green coriander and slit green chillies. Mix then and cook for another 2 minutes
  9. Now the dish is ready which can be served with and Indian bread or Flavored Rice
