Ingredients Serving: 2

  1. Meringues:
  2. Egg whites - 1
  3. Fine or powdered Sugar - 2tsp
  4. vanilla extract - 1/2 tsp
  5. Orange juice - 1tbsp
  6. Orange zest - 1/4th tsp
  7. Other Ingredients :
  8. Chopped almonds - 1 tbsp
  9. Chopped dates - 1 tbsp
  10. Coconut powder - 1 tsp
  11. Orange halves (cleaned and pulp removed) - 2
  12. Orange ju :
  13. Orange juice - 1 cup
  14. Sugar - 2 tbsp
  15. Butter- 1 tsp

Instructions

  1. Whisk the egg whites to form a frothy foam. whisk till it forms soft peaks.
  2. Now slowly add the sugar whilst whisking, add the vanilla extract and whisk till it forms hard peaks.
  3. Now mix in the orange juice, zest into the meringue mix. Fold in the chopped almonds, and dates.
  4. Put the orange halves into 2 tart case. Put the meringue into the orange halves. Sprinkle coconut powder.
  5. Bake them in a preheated oven at 120 degree celsius for 1 hr. Allow them to cool.
  6. To make the Orange ju, reduce the Orange juice with sugar and butter added to form a semi thick syrup.
  7. Serve with the meringue
