Zafrani Rice

Ingredients to make Zafrani Rice

  • Basmati rice...2 cups
  • sugar..1 1/2 cup
  • ghee..4 sp
  • Green cardamom..7/8
  • cinnamon stic...1
  • cloves...4/5
  • Black pepper...4/5
  • Black cardamom(moti ilaychi)..2
  • Tejpatta...2
  • Juice of 2 oranges or kinnoo
  • Orange zest...2sp.
  • Mix dry fruits..Cashew nuts,raisins,Almonds,Walnuts...1/2 cup
  • Dry coconut...thin slices
  • mawa...1/2 cup
  • Kesar strands or yellow color or turmeric powder

How to make Zafrani Rice

  1. Wash rice 4/5 times.
  2. Soak rice in enough water for 30 minutes.
  3. Take a pan,add 1sp of ghee.
  4. Roast Dry fruits in ghee.
  5. Boil rice in enough water.Add 2/3 green cardamom.
  6. Dont cook fully,it should be half cooked. Add yellow col while boiling.
  7. Drain the rice, and put under running water,so that it does not cook any more.
  8. Now take a pan with heavy bottom.
  9. Add 3 sp of ghee.
  10. Add Jeera,and all whole dry masala..
  11. Add orange juice with sugar and dry fruits.
  12. When sugar dissolves completely,add rice.
  13. Mix well.
  14. Cover the pan and let it cook for 5 minutes or till rice soaks whole juice.
  15. Now add crumbled Mawa in the rice.
  16. Mix properly.
  17. You will get a sweet aroma of oranges.
  18. Before serving add orange zest.
  19. Zafrani rice is ready to eat.
