ABOUT Vegetable Tehri RECIPE

Vegetable Tehri Tehri /Tahiri is a yellow rice dish in Awadhi cuisines.It is normally made on lazy Sundays.A one pot dish,which is very easy and quick to cook.Its the most comfort,soulful and humble food ,that everyone can enjoy,specially in winters as well as in summers also.

Ingredients Serving: 2

  1. 1 and 1/2 cup Rice soaked in water for at least 1 hour.
  2. 1 thin sliced onion
  3. 3 to 4 tomatoes (roughly chopped)
  4. 1/2 a cup green peas
  5. 2 carrots (finely chopped)
  6. 2 to 3 chopped green chilies
  7. 1 tsp cumin seeds
  8. 3 to 4 cloves
  9. 1 to 2 bay leaves
  10. 1 tsp turmeric powder
  11. 2 tsp coriander powder
  12. 2 to 3 dry red chilies
  13. 2 tsp dry mango powder
  14. Salt to taste
  15. 1/2 tsp sugar
  16. 1 inch piece of grated ginger 
  17. 4 to 5 cloves of garlic(finely chopped
  18. 2 tsp Fresh lime juice 
  19. Oil 3 tbsp
  20. Fresh chopped green coriander for garnishing.
  21. Maggi masala to be sprinkled on the top (optional)

Instructions

  1. Firstly take a wok add oil and heat it up.
  2. Add cumin seeds,bay leaves,ginger,garlic,cloves and dry red chilies.
  3. Saute it for few minutes.
  4. Now add onions and fry them till they turn translucent in color.
  5. Now add the tomatoes,peas,green chilies and carrots .
  6. Add sugar and all the dry spices.(turmeric powder,coriander powder,salt,dry mango powder and red chili powder)
  7. Stir the veggies properly,till they turn soft and starts leaving oil.
  8. After this take your soaked rice and add water around 2 cups and stir it nicely and cover it with a lid on a medium flame.
  9. After 15 minutes check the rice,if its done or under cooked.
  10. If it is under - cooked then keep it for more time.
  11. Lastly add lime juice and mix the tehri and switch off the flame.
  12. Serve the tehri by garnishing it with green coriander leaves and sprinkle maggi masala if you wish to add.
