Ingredients to make Kardi Pulao

  • 1 Big cup Kardi /small prawns
  • 200 grams rice (use as per choice)i used basmati tukda
  • 2-3medium potatoes
  • 2 Medium onions
  • 2 tomatoes
  • 1 cup dried onions for golden fried onions
  • Corriander to garnish
  • salt to taste
  • 1 tsp red chilli kashmiri
  • 1/4 tspn turmeric
  • 1 tspn Garam masala
  • 4-5 peppercorns
  • star anise
  • Sum pure ghee

How to make Kardi Pulao

  1. Wash clean kardi/prawns well apply salt
  2. Chop onions and tomatoes keep fine
  3. Wash soak rice for 5 minutes and cook with more water to strain
  4. Cook in open vessel and strain when rice done ,of all the water away
  5. Fry sum dehydrated onions golden too
  6. Heat oil and add onions to saute with salt turmeric and ginger garlic paste
  7. Add spices and tomatoes now along with the Kardi/Prawns
  8. Mix well , add a cup of water to cook prawns
  9. Mix well
  10. Fry potatoes in big pieces on side while the prawns are cooking on slow
  11. Add the half fried potato chunks in the prawns masala cover cook 5-7 minutes
  12. Check potatoes and prawns once done
  13. Now take a bigger bowl mix both rice and the prawn masala lightly
  14. Serve with plain curds and green onions or as is
  15. Sprinkle the fried golden onions to top

My Tip:

Use little fried onions for taste in the prawn /kardi masala Serve hot can also boil potatoes and keep before hand saute and add inthe masala to cook in masala
