RAGI MALAI CAKE (GLUTENFREE CAKE)

Ingredients to make RAGI MALAI CAKE (GLUTENFREE CAKE)

  • malai/fresh cream 1 cup
  • Powdered sugar 1 cup
  • Ragi flour 1 &1/2 cup
  • Baking powder 1 teaspoon
  • Baking powder 1/4 teaspoon
  • Cooking oil 2 tablespoon
  • eggs 2
  • Vanilla essence 1 teaspoon
  • Choco chips 4 tablespoon
  • butter for greasing cake tin

How to make RAGI MALAI CAKE (GLUTENFREE CAKE)

  1. Sift together ragi flour, salt, baking powder and baking soda. Add choco-chips to the dry flour and mix, so that they do not settle at the bottom of the pan when baking.
  2. Grease a cake mould with some butter. Line it with butter paper(this is optional. Instead you can dust the cake tin with dry flour and then remove the excess flour)
  3. Preheat the oven at 200C for 10 minutes
  4. Take sugar and malai in mixer jar blend well. Empty in a mixing bowl. Add eggs one at a time and whisk. Add vanilla essence and mix.
  5. Mix dry and wet ingredients. Add 2 tbsp oil and mix again.
  6. Transfer into the greased baking pan. Allow this to bake for about 30 minutes. Check if a toothpick inserted in the centre of the cake comes out clean means it's done.
  7. If not then give it another 5 minutes.
  8. Once done keep the cake mould on a wired mesh to cool. Remove the cake from the pan, cut into desired slices and serve.
