Batata Vada

Ingredients to make Batata Vada

  • 1kg potatoes boiled peeled and smashed into smooth pulp
  • 4 tbsp green chilly paste
  • 3 tbsp ginger
  • 5 curry leaves broken into pieces few corriander leaves
  • 4 tbsp each of sugar and lemon juice
  • salt to taste
  • For seasoning ( vaghaar)
  • 1 tbsp oil 1 tbsp mustard seeds
  • 1 tsp astafoetida
  • 6 curry leaves
  • For batter
  • 250 gm gram flour
  • 3 tbsp kashmiri red chilly powder
  • 1 tsp green chilly paste
  • 1 tsp ginger paste
  • 1 tbsp corriander powder
  • I tsp sugar
  • 1 tsp baking soda
  • salt to taste
  • oil to fry

How to make Batata Vada

  1. Mash pre boiled,peeled potatoes. Smooth it. Add green chillies paste, good amount of ginger paste, broken pieces of curry leaves coriander, sugar and lemon juice, salt.
  2. Heat 1 tsp of oil, splutter mustard seeds. As it crackles add curry leaves and Asafoetida.
  3. Pour seasoning on whole batch of potato mix. Again mix well.
  4. Greasing hands roll the batch into small to medium sized balls. Cover them untouched.
  5. For batter
  6. In vessels, take gram flour.Mix all ingredients.
  7. Add water, little by little.. Mixing into uniform smooth batter avoiding lumps.
  8. Consistency of batter should be such that it flows from hand like thin liquid mix. In it soak 5 potatoes balls
  9. For Frying take, kadai.Heat oil very hot.
  10. Roll down 5 soaked potatoes balls coated batter into hot oil.fry all sides till golden in color.
  11. On tissues,pat dry hot batata Vada excess oil
  12. Serve hot with green coriander chutney/mint chutney, tomato ketchup

My Tip:

Can be served in high tea party, As side dish for festive celebration or eaten as breakfast tucked in pavement with tea or coffee.
