Ingredients Serving: 2

  1. Boneless chicken (diced) - 200 gm
  2. Garlic paste - 1 tsp
  3. Pepper powder - 1 tsp
  4. Green chillies (chopped) - 1 tbsp
  5. Garlic (chopped) - 1 tbsp
  6. soy sauce - 2 tbsp
  7. Egg - 1
  8. Cornflour- 3-4 tbsp
  9. Salt
  10. Coriander stems and leaves (chopped) - 1/2 to 3/4 th cup (depending on personal preference)
  11. lemon juice - 1 tbsp
  12. Refined oil
  13. For the vegetable fried rice :
  14. Chopped carrots - 1/4 th cup
  15. Chopped beans - 1/4 th cup
  16. Chopped spring onions - 3 tbsp
  17. Chopped garlic and ginger - 1 tbsp
  18. Chopped green chillies - 2 tsp
  19. Salt
  20. Ajinamoto (optional) - 1/2 tsp
  21. Soy sauce - 1/2 tsp
  22. Refined oil
  23. Cooked Basmati Rice - 1 cup

Instructions

  1. Marinate the chicken with garlic paste, half the soy sauce, egg, salt, cornflour and half the pepper powder for 30 minutes.
  2. Then deep fry the marinated chicken in hot oil and keep aside.
  3. Heat a wok/kadhai with some oil. Add the chopped garlic and chopped green chillies.
  4. Once they smell, add the coriander stems and leaves.
  5. Saute for few seconds and then add the soy sauce, pepper powder and very tiny amount of salt.
  6. Stir till it bubbles and then add the deep fried chicken and give it a mix. Finally add the lemon juice and serve.
  7. For the vegetable fried rice:
  8. Heat little oil in a nonstick kadhai. Add the chopped garlic, ginger and green chillies.
  9. Once they start smelling, add the chopped vegetables and stir. Add salt and cook with lid on till veggies ate done.
  10. Add Soy sauce, Ajinamoto and stir. Add the cooked basmati rice and mix. Cook for few minutes and then serve.
