Ingredients to make Lamingtons

  • eggs 6
  • sugar 3/4 cup
  • 1/4 tsp salt
  • 1tsp Vanilla Extract
  • 1 1/3 cup cake flour
  • 5 tbsp butter(meltded and room temp.)
  • 1 cup chcocolate chips
  • 3 tbsp butter
  • 3/4 cup Milk
  • 2 cup icing sugar
  • 2tbsp coco powder
  • 3 cups desicated coconut

How to make Lamingtons

  1. Grease 9"square pan with butter. line parchment paper at the bottom
  2. Whip eggs and sugar well add vanilla extract.beat till ribbon stage
  3. Gently sift cake flour with salt over the egg mixture add melted butter.
  4. pour the mixture in pan bake in preheated oven at 180 for 25 min.
  5. over a pan simmering water set bowl add chcocolate chips,butter,milk.once melted remove from pan then add icing sugar and coco powder.give a whisk.
  7. Cut the cake horizontally in to two pieces.
  8. spread 1/2 of chcocolate icing over the one layer of cake and top with other sponge.
  9. cut it into 25 pieces
  10. spread desicated coconut into plate
  11. dip each piece into melted choclate wipe the exess. place in over the desicated coconut plate and coat well. let it set in fridge for 5 min. served with tea of coffee
