Ingredients to make Tikkar

  • maize flour (makkai ka atta)...1cup
  • Whole wheat flour..1cup
  • Melted ghee...2tbsp
  • salt to taste...
  • ginger paste...1/2 tsp
  • Chopped onion...1/2 cup
  • garlic paste...1/2 tsp
  • Chopped coriander leaves..1tbsp
  • Whole wheat flour for rolling.
  • ghee for cooking.

How to make Tikkar

  1. Combine maize flour,wheat flour and salt in a deep bowl and mix well.
  2. Add ghee and run with your fingertips till the mixture resembles bread crumbs.
  3. Knead into a stiff dough using enough water.
  4. Cover the dough with a wet muslin cloth.
  5. Now after 5 minutes,add remaining ingredients and knead well.
  6. Divide the dough into 6 equal portions.
  7. Roll out each portion into a roti using little whole wheat flour.
  8. Heat a pan or tava
  9. Cook the collar using little ghee,till golden brown spots appear on both the sides.
  10. Serve with curd and pickle of your choice.

My Tip:

You can combine flour and all ingrediends and then knead dough. Tomates can also be used with onions.
