ABOUT Tipsy Pudding or English Triffle RECIPE

A trifle is a dessert made from thick custard, fruit, sponge cake, fruit juice and whipped cream. These ingredients are arranged in layers in a transparent glass bowl or in a tall glass with the sponge cake forming the bottom layer. The alcoholic version is known as tipsy pudding. In original Tipsy Pudding the layer of cake is well soaked with sherry or rum or wine and served with a boiled custard poured over it. This dish got its name because it can make one slightly tipsy from the wine or sherry in it. The Non-alcoholic versions use fruit juices instead of the sherry or wine as some liquid need to be use to moisten the cake layers.

Ingredients Serving: 6

  1. A sponge cake : you can make it at home or buy a basic sponge cake from store
  2. Freshly prepared vanilla custard
  3. Fresh fruit/ canned fruit
  4. Fruit juice : enough to soak the fruit pieces
  5. Few drops of rum/sherry or wine
  6. Your favorite jelly/jam : 1-2 tblsp.
  7. Whipped cream - traditionally it is a must but in variation you can skip it too.
  8. For decoration - dry fruits, candied cherries, fresh fruits, toasted sliced almonds
  9. Ingredients for sponge cake
  10. All Purpose Flour- 1 1/2 cup Yellow Food color(optional) : 2-3 drops
  11. Sugar-1 cup, Curd-1 cup
  12. Vegetable Oil-1/2 cup
  13. Baking Powder-1 1/2 tsp, Baking Soda-1/2 tsp
  14. Lemon Essence-1 tsp, Lemon peel(grated) :1/2 tsp.
  15. Ingredients for vanilla custard
  16. 2 cups Milk
  17. 2 eggs,
  18. 2 tblsp. Cornstarch
  19. 1/3 cup sugar
  20. 1 tblsp. Vanilla essence

Instructions

  1. To make vanilla custard : Keep aside 2 slightly beaten eggs. Combine milk, sugar and cornstarch in a medium saucepan and heat over medium heat. Whisk with a wire-whisk and allow milk to boil until tiny bubbles form around the pan.
  2. Whisk occasionally to prevent cornstarch from clumping on bottom of the pan. Remove from heat and keep aside. Mix 2 tblsp.Milk mixture into eggs using whisk,then add eggs into milk mixture in a slow stream,whisking milk mixture continuosly
  3. Immediately, return pan to heat and whisk gently until custard thickens, another 2-3 minutes. Do not allow it to boil. Remove from heat and stir in vanilla. Tips : Custard will thicken more after it cools down.
  4. To make sponge cake : Preheat oven to 180C. Grease the baking try with vegetable oil or butter and set aside. In a bowl add curd and beat well till the curd becomes very smooth without lumps.
  5. Then add sugar to this and mix well till the sugar dissolves. Now add baking powder and baking soda. Mix well and keep aside for 10 minutes. After 10 minutes you'll notice some bubbles on the top.
  6. To this add oil and lemon essence. Keep whisking until everything is mixed well for 2 minutes. Then finally add all purpose flour to this mixture little at a time and fold until whole flour are used.Whisk the mixture until it looks creamy.
  7. Now pour this mix to the baking tray and level the top. Tap the tray lightly on the counter get rid of the big air bubbles. Place the tray in the preheated oven and bake for 25-30 minutes
  8. After 25 minutes insert a toothpick in the centre to check is it is done. If the toothpick comes out clean without any crumbs, then it is done. If you see the center is still moist, then bake for some more time. Remove from the oven
  9. Assembling : If you are using fresh fruits, cut them in small pieces. Then soak in fruit juice. If you want to make the alcoholic version, add few drops of rum/sherry or wine in the fruit juice. Keep the custard ready. Chop the sponge cake.
  10. Assemble in a glass : Take a tall and clear glass or bowl, arrange the cake pieces at the bottom of the glass.
  11. Then add 1-2 spoonful of fruits with fruit juice, so cake pieces can soak the juice.
  12. Next, place 1 tblsp. of your favorite flavour of jam or jelly.
  13. Next comes vanilla custard. Pour 2-3 tblsp. of vanilla custard on top.
  14. Now place 1-2 tblsp. of whipped cream over the custard layer. You can skip it if you don't have whipped cream.
  15. Decorate with fresh fruits and/or slivered almonds, candied cherries etc.
