I was taught this by my househelp's mother. The extra chutneys can be used for other preparations also.

Rustic Rajasthani Mutton

Ingredients to make Rustic Rajasthani Mutton

  • Red Chutney:
  • 15 dry red chillies
  • 2 tbsp - coriander powder or seeds
  • 2 tsp - black peppercorns
  • 1 tsp - tumeric powder
  • 25 gms - fresh ginger and garlic
  • White Chutney:
  • 1 tsp - cloves and cinnamon
  • 50 gms - fresh garlic and garlic paste
  • Mutton:
  • 500 gms - mutton
  • 2 large potatoes large cubes (optional)
  • 100 gms - finely chopped onions
  • 100 gms - finely chopped tomatoes
  • 2 tbsp - oil
  • salt to taste
  • 4 tbsp - lemon juice

How to make Rustic Rajasthani Mutton

  1. First make the red chutney by grinding all the ingredients together. Set aside. Repeat for the white chutney
  2. Fry the onions till brown. Add the tomatoes and fry them with half the red chutney until cooked.
  3. Add half the white chutney and cook until the oil starts to separate.
  4. Add the salt and the mutton.
  5. Roast the mutton until nice and brown and totally dry. Then add the potatoes
  6. Add water and pressure cook until the mutton is nice and tender.About 30 minutes.
  7. Once the mutton is ready, check for seasoning and add lemon juice before serving
