Ingredients to make Baati

  • Whole wheat flour. 2 cups
  • Suji. 1/4 cup
  • ghee. 4tbsp
  • salt. 2tsp
  • potatoes. 2 boiled
  • peas. 1/2, cup boiled
  • ginger. 1 inch
  • green chillies. 1-2
  • jeera powder. 1tsp
  • Red chillie powder. 2tsp
  • Corriender powder. 3tsp
  • amchur powder. 2tsp
  • oil. 2tbsp
  • salt to taste

How to make Baati

  1. Take whole wheat flour and suji in a bowl.
  2. Add salt and mix well.
  3. Now make a well and add ghee to it.
  4. Spread it evenly with your hands and make a hard dough adding water to it.
  5. Cover this dough with wet cloth for sometime and meanwhile make the filling mixture.
  6. Take oil in a pan and heat it.
  7. Add ginger and green chillies to it.
  8. Then add mashed potatoes and peas to it.
  9. Mix it well.
  10. Now add all the spices and salt.
  11. Mix well and cook it for few minutes.
  12. Let it cool.
  13. Now take some dough like you take for roti. Make it round and smooth.
  14. Spread it a little with rolling pin and stuff some potato peas mixture in it.
  15. Cover it properly from all sides making a ball. Press it a little.
  16. Make all the baat is like this.
  17. Put it in gas or electric tandoor and cook it till they are properly cooked from all sides.
  18. Once it's cooked from one side flip it to other side.
  19. Apply some ghee.
  20. Serve the baatis hot with daal, ker sangri and churma.

My Tip:

The dough shud be little hard. Actually its served with lots of ghee but as we try to avoid ghee nowadays, I've made this using minimum ghee and still not compromising on taste.
