ABOUT Ragi Roti/ Finger Millet Flat breads RECIPE

Ragi is a staple food in many regions of Karnataka and frequently prepared in various forms. A healthy and nutritious replacement to the regular rotis. Use your palm to make these rotis without using a rolling pin. Urad dal or wheat flour/ almond meal is added to bind the dough.

Ingredients Serving: 3

  1. Ragi flour - 2cups
  2. Hot Water - approximately 3/4th cup
  3. Wheat flour /Urad dal powder /almond meal - 1/4th cup
  4. Salt - 1/2 teaspoon

Instructions

  1. Heat water in a wide vessel & add salt. Once the water is hot but not boiling hot, add ragi flour, (wheat/ urad dal powder/ almond meal). Mix the mixture roughly using ladle. Switch off the flame, cover the vessel and set aside for the dough to cool down.
  2. After 30 to 45 minutes grease your Palm and mix the dough throughly. Incase the dough is too soft add ragi flour and if the mixture is very dry add few drops of hot water.
  3. Divide the dough to lemon size portions. Place the dough in centre of your palm, apply gentle pressure. Press along the sides using the corners of the palm to form round rotis.
  4. Prepare all the rotis and cook on cast iron tava or nonstick pan using few drops of oil like regular rotis.
  5. Using a ladle make a semi incision in the middle of roti to ensure the centre is cooked properly.
  6. These rotis take little longer time to cook as they are slightly thick.
  7. Serve hot.
