Tomato, Deseeded Dates and Dried Mango Pulp Sweet Chutney

Ingredients Serving: 6

  1. Dried Mango Pulp - 100 gms
  2. Deseeded Dates- 100 gms
  3. Ripe red tomatoes- 200 gms
  4. Turmeric Powder- 1/2 teaspoon
  5. Lemon juice - 2 tablespoon
  6. Ginger/Mango Ginger juice - 2 tablespoon
  7. Salt to taste
  8. Sugar/Jaggery- 200 gms
  9. Dry red chillies- 2
  10. Panchphoron (mix of 5 spices) - 2 tablespoon (1 for tempering and 1 tablespoon to be dry roasted and ground)
  11. Roasted Masala- 1/2 teaspoon of whole cumin, 1/2 teaspoon of whole coriander and 1dry red chilli
  12. Refined oil- 1 tablespoon

Instructions

  1. Dice the tomatoes, dry mango pulp and vertically cut deseeded dates.
  2. In a wok heat oil. Add panchphoron and dry red chillies as the tempering.
  3. Add cut tomatoes, ginger juice, salt and turmeric.
  4. Cook until the tomatoes are done.
  5. Add sugar/Jaggery and Deseeded Dates.
  6. Cook until the right consistency( don't overcook)
  7. Finish it off with some roasted Masala and lemon juice.
