ABOUT Aloo Palak RECIPE

Potatoes cooked in rich spinach gravy is sure to be loved by all. It is a perfect accompaniment to roti or phulka.

Ingredients Serving: 3

  1. Potatoes (diced) 2
  2. Palak (Spinach) 1 bundle
  3. Onion (big, chopped) 1
  4. Tomato (diced) 1
  5. Green chilies 2
  6. vegetable oil 2 tbsp
  7. Cumin seeds 1 tsp
  8. Turmeric powder 1/4 tsp
  9. Ginger garlic paste 1 tsp
  10. Cloves 2
  11. Cinnamon 1 small piece
  12. Whole pepper balls 3
  13. Bay leaf 1/4 piece
  14. Water 1 cup
  15. Salt as required

Instructions

  1. Heat oil in a pan.
  2. Splutter cumin seeds along with cloves, cinnamon, bay leaf and pepper balls.
  3. Add the onions and saute until they turn soft and pink.
  4. Add the ginger garlic paste and saute for a minute.
  5. Add the tomato pieces and saute for minute.
  6. Next simmer the flame and add in the turmeric powder and mix well.
  7. Add in the diced potatoes and mix well.
  8. Next add in the water and salt and allow to boil
  9. Cook covered for 20-25 minutes.
  10. In the meanwhile, prepare a paste of spinach (palak), and green chilies. Add 1-2 tbsp of water if required.
  11. Check the potatoes for doneness
  12. If they are almost cooked, add in the palak puree and add salt, as required.
  13. Cook covered for another 2-3 minutes.
  14. Switch the flame off. Aloo palak is ready. Serve hot with roti or phulka.
