Shakkarkandi Ke Laddu

Ingredients to make Shakkarkandi Ke Laddu

  • Sweet potatoes – 2 Cups (boiled and mashed)
  • sugar – ¾ Cup (add or less as per your taste)
  • Grated coconut – 3 tbsp (for filling) + 1 tbsp (for garnishing)
  • Green cardamom Powder – ½ tsp
  • almonds & Cashews – 2 tbsp (coarsely crushed)
  • raisins – 10 to 15
  • ghee – ¼ Cup

How to make Shakkarkandi Ke Laddu

  1. Heat ghee in a non-sticky pan. Add mashed sweet potatoes and sauté for 12-15 minutes
  2. Add grated coconut, green cardamom powder, almonds & cashews, raisins and sugar. Mix well.
  3. Keep stirring until the mixture comes together as a single mass.
  4. When the mixture is still warm, shape them into small balls.
  5. Put grated coconut in a plate and roll the balls over it.
  6. Place them in the fridge for 10-15 minutes and serve..
