ABOUT Kala Jamun RECIPE

These jamuns are not very popular but I like them very much chewy outside and grainy inside. Prepared with paneer, soft mawa (homemade from milk powder). Almost same like simple gulab jamun .Only fried a little more for black colour

Ingredients Serving: 10

  1. Mawa 1 cup
  2. Maida 1/4 cup and1 tbsp
  3. Paneer 1/2 cup
  4. Chopped nuts 1/4 cup
  5. Cardamom powder 1 tsp
  6. Green food colour few drops
  7. Baking soda 1/4 tsp
  8. Ghee for frying
  9. Milk for making smooth dough
  10. For sugar syrup -
  11. Water 1 cup
  12. Sugar 2 cup

Instructions

  1. Crumble and mash paneer in a plate
  2. Add mawa and maida. Add baking soda. Knead the dough with milk Cover it with a clean kitchen towel for 5 minutes.
  3. After that divide the dough into 3 : 1 ratio
  4. Add green food colour in less quantity.
  5. Make balls from both the dough Keep the size of Green balls smaller than white ones.
  6. Take 1 white ball press it in mid and place green ball in center the white ball then cover it all sides and make smooth ball.
  7. Heat enough ghee in a pan and fry these balls while pouring the ghee over till it gets black in colour.
  8. Soak the jamuns in sugar syrup for 2-3 hrs.
  9. For sugar syrup- Take 2 cup sugar in a vessel and add 1 cup water. Simmer until the sugar dissolves completely.
  10. After that check its consistency. it just like honey no need to any thread consistency. The syrup is ready.
