ABOUT Suji Gajrela RECIPE

This is a very special recipe that is close to my heart as it was passed on to me by my grandmom. Carrots cooked in rich luscious cream,milk,semolina and lots of dry fruits just right for any party or get togethers. It is a heavenly treat for all the dessert lovers. You just have to dig into it to believe in it's magical flavour and taste. Loaded with all the goodness of so many ingredients makes it a sure shot hit .

Ingredients Serving: 6

  1. Grated carrots 6 cups
  2. Semolina 2/3 rd cup
  3. sugar 1 cup
  4. Fresh cream 3/4 th cup
  5. Milk 1 1/2 cups
  6. cardamom powder 1 tsp
  7. Butter or ghee 3/4 th cup
  8. Dry fruits of choice 3/4 th cup soaked and slivered

Instructions

  1. Grate the carrots first.
  2. Switch on the gas and add the milk to it and let it cook on a low heat for 15 to 20 mins. Keep it covered.
  3. After it gets cooked and becomes tender and soft, add sugar.
  4. Simmer it for another 5 to 8 mins. Meanwhile in about 2 tbsp of butter, roast the semolina in a pan.
  5. Semolina can be increased also but for this recipe, this measurement fits perfectly well.
  6. After the semolina changes colour a little bit, not too brown and gives a nice aroma, switch off the gas. It takes 6 to 7 mins and should be done on low flame.
  7. By now the carrots must be cooked thoroughly and looks so glossy and shiny because of the sugar. To this add the semolina and the cardamom powder.
  8. Mix well and let it simmer on low flame only. Next is to add the cream. If desired transfer this into a non stick pan or pot at this point of time just to prevent it from sticking to the bottom. I did the same.
  9. Let it further simmer on low flame after adding the rest of the ghee or butter and keep stirring in between.
  10. Decorate as per your liking with your favourite dry fruits. I used almonds and pistachios.
  11. Serve it hot or chilled. It tastes splendid both the ways.
