ABOUT Beetroot And Tofu Barfi RECIPE

Beetroot and Tofu Barfi is a healthy and delicious Indian sweet that can be prepared during Holi or any other festival . This sweet is also suitable for lactose intolerant and vegans. I made this colorful (without any artificial colors ) sweet for my 3 year old daughter.

Ingredients Serving: 4

  1. Grated Beetroot - 1 cup
  2. Grated Tofu - 1 cup
  3. Sugar - 1 cup
  4. Ghee / Clarified Butter - 4 tablespoons

Instructions

  1. Take a kadai /wok. Heat Ghee. Once the ghee is warm , add grated beetroot to it. Saute it until it gets dried such that the raw smell of the beetroot goes off.
  2. To this, add grated tofu and sugar. Mix it well so that no lumps are formed. Allow it to cook over the medium flame by mixing it carefully until the mixture does not stick to the pan.
  3. In the meanwhile, take a serving plate.Apply ghee to it.
  4. Then switch off the flame and transfer the hot beetroot and tofu mix to the ghee applied plate. Spread it evenly with a flat spatula.
  5. Take a knife and make marks through this mixture. Ensure that the mixture is hot while making mark . Also do not separate it into pieces else the pieces may break.
  6. Allow it to cool for some time. Once it is cool , garnish the barfis with slightly fried cashewnuts or grated almonds. The Beetroot and Tofu Barfi is ready to be served.

Nice sweet. But how can it be Vegan when you have added Ghee / Clarified butter in your Barfi? Also lactose intolerant means allergy to milk and milk products. Ghee is a milk product. So how is your Barfi for the lactose intolerant? Thank you.
