Ingredients to make Banana-blueberry burfi

  • 4 bananas- riper the better
  • jaggery- melted 3tbsp
  • cardamom powder- 1/4tspn
  • Crushed cashews,almonds-6 each
  • Rice flour-3/4 cup
  • Grated coconut-1/4 cup
  • Dry Blueberries- few

How to make Banana-blueberry burfi

  1. Roast rice flour till the raw smell disappears
  2. Grind bananas into paste and just as you are about to switch off the mixer, add 4-5 blueberries and just rotate the mixer for a second
  3. Add this paste into the pan with roasted rice flour.
  4. Keep stirring and add melted jaggery, cardamom powder, dry fruits and grated coconut
  5. Keep stirring at really short intervals. This is the important step, as the consistency of this decides how the burfi will turn out :)
  6. Keep mixing till it becomes a thick paste.
  7. Transfer it into a flat plate (preferably quarter plate, it will give the required thickness to the burfi)
  8. Cut into the desired shapes, garnish with blueberry on top of each piece.
  9. Ur banana-blueberry burfi is ready...Eat it as is or refrigerate and eat cool..

My Tip:

The over ripe Bananas which you generally don't understand what to do with are the best for this.
