ABOUT Maggi and Purple Cabbage Crunchy Salad RECIPE

An appealing and crunchy salad with purple cabbage that is loaded with anti oxidants. It has a touch of freshness too. Use of toasted maggi in this gives it a crunchy effect. Also it has the walnuts which have amazing health benefits as well. So in all, it can be said that this crunchy salad is a show stealer. A power packed punch to kick start your day with a new zeal and enthusiasm. It can be made as colourful as possible with all of your favourite veggies and nuts. It has a vinegar dressing that enhances it's flavour even more along with black eyed beans and black chickpeas . Simple and yet loaded with all the goodness of vitamins and minerals.

Ingredients Serving: 6

  1. Purple cabbage 1 small shredded
  2. Black eyed beans (lobia) 1 cup
  3. Black chickpeas (kala chana) 1 cup
  4. Sweet corn 1 cup
  5. Maggi noodles toasted 2 cups
  6. Salt to taste
  7. walnuts few
  8. FOR THE VINEGAR DRESSING :::
  9. White Vinegar 2 tbsp
  10. Sugar 1 tbsp

Instructions

  1. Maggi noodles can either be toasted or shallow fried in little butter.
  2. Soak the pulses separately overnight or for 4 hours atleast whichever is suitable for you.
  3. Boil them both with little salt, drain and keep aside. Black eyed beans does not require much boiling. So care should be taken while boiling that.
  4. Wash the cabbage and shred it either finely or little coarsely.
  5. Combine and toss all the ingredients in a wide mouthed bowl along with the dressing.
  6. Top it up with the walnuts.
  7. And serve it along with a generous amount of toasted maggi noodles on top.

Really delicious Nutritious Salad. Thankyou for sharing this recipe. Little change..instead of vinegar.. I used lemon juice and sprinkle Maggi masala.(veg).
