I tried maagi dahi puri. After trying it I even want to try paneer dahi puri with lot of crumbled paneer and mixed chutneys and it was totally yummy.

Ingredients Serving: 3

  1. Ingredients for puris:
  2. 2 cups sooji (semolina)
  3. 1/8 tsp baking powder
  4. Pinch of salt
  5. 3 to 4 tbsp all purpose flour
  6. INGREDIENTS FOR DATES TAMARIND CHUTNEY:
  7. 1/4 cup tamarind soaked in 1/4 cup water
  8. 1cup dates deseeded soaked in half cup water
  9. 2 tsp coriander powder
  10. 1 tsp red chilli powder
  11. 1 tsp ginger powder
  12. Black salt for taste
  13. INGREDIENTS FOR RED CHILLI GARLIC CHUTNEY:
  14. 10 dry red chillies
  15. 6 to 7 garlic cloves
  16. Salt for taste
  17. INGREDIENTS FOR GREEN CHUTNEY:
  18. 1 cup of coriander leaves
  19. 2 green chillies
  20. Salt for taste
  21. Ingredients for paneer dahipuri:
  22. 30 puris
  23. One to one and half cup crumbled paneer
  24. Fresh green peas boiled
  25. 3/4 cup of dates tamarind chutney
  26. 1/2 cup of red chilli garlic chutney
  27. Spicy tomato ketchup
  28. 2 tsp red chilli powder
  29. 1 to 2 tsp chat masala
  30. 2 tbsp coriander powder
  31. Amchur powder
  32. Panipuri masala
  33. Salt for taste
  34. Thick curd
  35. Pinch of sugar
  36. Sev

Instructions

  1. Procedure for preparing pooris:
  2. Take 2 cups of semolina and add 1/8 tsp of baking powder, salt and mix well
  3. Add water and mix. Semolina absorbs the added water
  4. Add 3 to 4 tbsp all purpose flour
  5. Mix and knead to a soft, elastic, non sticky dough. Lastly add little oil and knead
  6. Grease the surface with oil. Take small portion of the dough and roll it flat using roller
  7. Cut in to small circles with lid or cap of some wide bottle
  8. Fry in oil until they turn brown color. They puff up as soon as you add in oil
  9. After frying bake them at 150 degree centigrade for 15 minutes to leave the moisture completely. They will be totally crisp after baking
  10. Fry them to little light brown color and bake them.These crispy puris can be used for preparing paneer dahipuri
  11. Procedure for dates tamarind chutney:
  12. Soak 1/4 cup tamarind in 1/4 cup water and microwave. Similarly soak cup of dates in half cup of water and microwave. Extract tamarind juice and add to blender. Even add soaked dates, coriander powder, red chilli powder, black salt, ginger powder, cumin powder and blend by adding water.
  13. Here is the dates tamarind chutney
  14. Procedure for red chilli garlic chutney:
  15. Soak about 10 red chillies in hot water for 30 minutes. Add soaked chillies in blender with 6 to 7 garlic cloves and salt
  16. Blend to paste by adding water to it
  17. Green chutney can be prepared by blending coriander leaves with chilli and salt
  18. Procedure for paneer dahi puri:
  19. Take the crumbled paneer in pan and all spices red chilli powder, coriander powder, chat masala, amchur powder, cumin powder, pani puri masala and salt. Adjust all spices according to your spice levels.
  20. Mix all spices with paneer and slightly heat it for 3 minutes. Add spicy tomato ketchup to it and mix
  21. Next step is filling. Take puris and make hole at the centre.
  22. Fill the puris with prepared spicy crumbled paneer. Fill 3/4 of puris with paneer
  23. Add boiled fresh green peas on top of crumbled paneer
  24. Now add all chutneys dates tamarind chutney, red chilli garlic chutney. You can prepare with these 2 chutneys or you can even add green chutney. I used dates tamarind and red chilli garlic chutneys.
  25. Next add sliced onions
  26. Finally add thick curd (add pinch of sugar to curd) sev and sprinkle red chilli powder and chat masala on top. Garnish with coriander or some curry leaves
