Ingredients Serving: 4

  1. Chana dal – 1/3 cup
  2. Moong dal – 1/3 cup
  3. Urad dal – 1/3 cup
  4. Rice flour – 2 tspns
  5. Gram flour/ besan – 2 tspns
  6. Ginger – 1 inch piece
  7. Green chilli – 2 to 3
  8. Coriander leaves – handful
  9. Red onion – 1 large
  10. Chilly powder – 1/2 tspn
  11. Garam masala powder – 1/4 tspn
  12. Turmeric powder – a pinch
  13. Salt – according to taste

Instructions

  1. Wash and soak lentils for 3 to 4 hours. Drain water, add ginger and one chilli to lentils and grind to coarse mixture. Add a spoon or two of water ONLY if required.
  2. Add rice flour, gram flour/ besan to this mixture. Also add finely chopped onions, finely sliced chillies, finely sliced coriander leaves and remaining spices. Mix well. Rice flour and besan can be adjusted according to requirement.
  3. Heat oil for deep frying. Once oil is hot drop uneven sizes of mixture to get crispy edges. Fry on medium flame. It takes couple of minutes more for frying lentils than regular fritters. Flip sides when one side is cooked well. Fry fritters on medium flame for best results.
  4. Fry till golden brown. Transfer on kitchen towel.
  5. Serve hot with choice of chutney/ dips/ sauces or with hot cup of masala chai.
