Vegetable soba noodle

Ingredients to make Vegetable soba noodle

  • 200 grams soba noodles
  • 1 onion thinly sliced
  • 100 grams green beans
  • yellow capsicum thinly sliced
  • 2-3 spring onion leaves sliced
  • 2 cloves garlic finely chopped
  • 50 grams cooked barley
  • 3 tablespoon vegetable oil
  • 4 tablespoon teriyaki sauce
  • salt to taste
  • Dressing Ingredients:
  • 100ml teriyaki sauce
  • 1 tablespoon freshly grated ginger
  • 1 lemongrass stalk inner core crushed and finely sliced

How to make Vegetable soba noodle

  1. To make the dressing, pour the teriyaki sauce, lemongrass and ginger in a small pan. Stir the ingredients well together and bring it to a boil.
  2. Lower the flame, let this simmer and cook for 8-10 minutes till this sauce has thickened. Set aside.
  3. Put the soba noodles in a pot of boiling water, cook for 2-3 minutes till the noodles are soft. Drain the noodles under running water and keep aside.
  4. Take a bowl, put in the barley, peppers, spring onions, mushrooms, garlic, onion. Pour in the teriyaki sauce and mix it well with the vegetables.
  5. Heat the oil in a pan on medium flame. Add in the vegetable mixture along with noodles, stir fry and cook for 3-4 minutes.
  6. Put these noodles into serving bowls, drizzle the dressing on top and serve instantly.
