White peas make this most popular dish Ragda.This is served with potatoes boiled and coriander,imli chutneys adding chopped onions.

Ingredients Serving: 4

  1. 150 grams white peas
  2. 2-3 medium potatoes firm boiled
  3. 1 big onion chopped fine
  4. Salt to taste
  5. 1/2 Tsp Cumin powder
  6. 1/2 Tsp red chili Kashmiri powder
  7. 1/4 tsp turmeric powder
  8. For Green Chutney :
  9. 1 bunch coriander
  10. Few mint leaves
  11. 2-3 green chilies
  12. Salt to taste
  13. For Imli chutney:
  14. 50 grams Imli/tamarind
  15. 2 small pieces jaggery
  16. 1 tbsp sugar
  17. 2-3 dates
  18. Salt Pinch
  19. 1/4tsp Red chili powder
  20. 1/2 Tsp cumin

Instructions

  1. Soak the white peas over night or minimum 6 hours
  2. Add 21/2 glasses water and the salt, red chili, also turmeric
  3. Put to boil for 15-20 minutes
  4. Remove in bowl to cool
  5. Mean while wash coriander, mint and green chilies grind to paste
  6. Make Tamarind chutney, soak Tamarind 10-15 minutes and strain pulp add the dates, chili powder jaggery, cumins and boil well
  7. Keep chopped onion, boiled potatoes cooled peeled green and Tamarind Imli chutney ready.
  8. Chop potatoes into small cubes
  9. Now start mixing the chaat
  10. Add onions chopped
  11. Add both green and imli chutney to above
  12. Mix lightly
  13. Now crush on it the puris on this and place some around
  14. Serve as above or separately place chutney and onion
  15. Enjoy this great tasty Ragda Chaat
