Ingredients Serving: 4

  1. 4 medium ripe Alphonso mangoes , peeled and coarsely chopped and pureed plus slices of 1 mango for garnish.
  2. 3 tablespoons sugar
  3. 2 teaspoons freshly squeezed lime juice (1/2 lime)
  4. 2 cups heavy cream (Divide into 2 cups separate)

Instructions

  1. In the jar of a blender, combine chopped mangoes, 2 tablespoons sugar, and the lime juice. Blend until a smooth pulp. Divide into 2 portions.
  2. In a bowl whisk heavy cream until peaks form.
  3. Remove 1/2 cup whipped cream; set aside.
  4. Using a rubber spatula, gently fold one portion of mango puree into the remaining whipped cream until well combined.
  5. Divide the plain whipped cream evenly among four glasses as the bottom layer.
  6. Gently layer mixture of mango pulp over the whipped cream.
  7. Also, add some cut mango pieces over the pulp.
  8. Pipe in the next layer of the whipped cream-mango pulp mixture.
  9. Again a layer of mango pulp over it.
  10. Finally layer it again with reserved plain whipped cream and garnish with mango slices, pistachio or nuts of your choice and allow the glasses to chill for 2-3 hours. To be served chilled.
