Ingredients Serving: 2

  1. Yam 250gms or chopped cubes 1 cup
  2. Malabar spinach or Basella leaves 1/2 cup
  3. Tamarind pulp 1/2 tsp
  4. Jaggery small piece (optional)
  5. For Tempering:
  6. Mustard seeds 1/2 tsp
  7. Jeera 1/2 tsp
  8. Urad dal 1/2 tsp
  9. Red chilies 2-3
  10. Green chilies 2-3
  11. Hing -pinch
  12. Curry leaves
  13. Salt 1-2 tsp
  14. Turmeric a pinch

Instructions

  1. Pressure cook yam and Malabar spinach with half cup water and a little salt.
  2. After the veggies are cooked well. Note, do not mash them fully.
  3. In a Kadhai or wok add 1tbsp oil, then add mustard, jeera, urad dal, red chilies, green chilies slit, curry leaves, asafoetida(Hing).
  4. To this add the cooked veggies and stir well.
  5. Now add tamarind pulp, jaggery. Note: you can skip jaggery here if you don't like
  6. Add turmeric, salt, coriander powder and stir it well.
  7. Cook the mixture for a few minutes as it thickens.
  8. Check the taste, add salt if any required. And switch of the flame.
  9. Serve it hot with steamed rice or Phulka
