Ingredients Serving: 2

  1. For methi roti : Whole Wheat Flour 1 cup
  2. Methi leaves, chopped 1/2 cup
  3. For stuffing : Egg 1
  4. Potato cut in small pieces 1/2
  5. Capsicum cut in thin stripes 1/2
  6. Onion, chopped - 1/2
  7. Ginger, chopped 1/3 tsp
  8. Coriander powder 1/3 tsp
  9. Chilli powder 1/4 tsp
  10. Cumin powder 1/3 tsp
  11. Garam masala a pinch
  12. Chopped coriander leaves 1 tsp
  13. Mayonnaise low fat 1 tbsp
  14. Tomato sauce 1 tbsp

Instructions

  1. First we will make the stuffing. Heat oil in a nonstick pan, add chopped onion and ginger. Saute for a minute.
  2. Add turmeric powder, coriander powder, chilli powder, cumin powder and salt. Saute for 1 mins on medium heat
  3. Add potatoes, cover and cook for 4-5 mins, add some water also to cook potatoes, check in between, potatoes should be well cooked. Add capsicum pieces, stir and cook for 2-3 mins. move the veggies to a side of the pan.
  4. Now on one side of the pan add little oil, add egg when the oil becomes hot. Don't disturb it for 1-2 mins. Now, mix with the veggies. Saute for a minute or two. Add garam masala and chopped coriander leaves. Turn off the gas and keep the dish aside.
  5. Now make methi roti : Mix atta, salt, methi leaves, oil, 1-2 tsp yogurt and kneed a soft dough with water. Keep aside for 20 minutes.
  6. Now make small balls and roll them to make rotis. Heat a non stick tawa and put the roti on it. Cook from both sides till brown spots appear. Take off from the tawa andapply some ghee. Now in big plate take one roti, apply mayonnaise, put stuffing and add tomato sauce. Cover the base of the Frankie with butter paper or aluminium foil. Serve hot with chai.
