ABOUT Lauki Ka Achar ( Bottle Gourd Pickle) RECIPE

Lauki or bottle gourd is not liked by many because of the bland taste even though it has numerous health benefits. This pickle will the way you look at this vegetable. Try it.

Ingredients Serving: 4

  1. Medium size lauki or bottle gourd cut into cubes -1
  2. Turmeric - 1/2 tsp
  3. Mustard oil or sesame seeds oil - 3-4 tbsp
  4. Red chilli powder - 2 tbsp
  5. Freshly ground mustard seeds - 1 tsp
  6. Freshly ground fenugreek seeds - 1 tsp
  7. Freshly ground coriander seeds - 1 tsp
  8. Crushed garlic clove - 1-2
  9. Salt - 1 tbsp

Instructions

  1. Wash and cut the bottle gourd with skin into small cubes. Boil some water with turmeric, Immerse these pieces in it and cover the vessel for 5 minutes.
  2. After 5 minutes, drain the water and spread the lauki pieces in a plate to dry.
  3. Add all the other ingredients in a sterilized glass jar and mix well with a clean dry spoon.
  4. After the bottle gourd pieces dry up nicely, add them to the jar as well. Close the lid and shake vigorously to mix.
  5. Place the jar in the sunlight for 2 to 3 days. Enjoy it with rice or rotis and a generous helping of desi ghee.
