Kokani special, Dudhi/ Ghia/ Lauki kay Tukde ka halwa, is an awesome dish. It is different as it does not have grated dudhi and as for the name suggests it has big pieces (tukde) of fresh bottle gourd, cooked and sauteed with pure ghee, cardomom powder, sugar and milk. It takes half an hour to make this amazing dish.

Ingredients Serving: 4

  1. 1 1/2 kg Bottle gourd/ Lauki/ Doodhi
  2. 500 millilitre Milk
  3. 200 grams Sugar
  4. 50 grams Ghee
  5. 1 /2 teaspoon Green cardomom seeds
  6. 1/2 cup Blanched chopped pistachios
  7. 1 tablespoon Coconut powder
  8. 1 tablespoon Cream/ Cream of boiled cooled milk


  1. Keep dry ingredients and the milk at room temperature.
  2. Clean, wash the gourd, cut into big chunks and if seeds are hard, remove the pulp with seeds
  3. Heat ghee and splutter cardamom seeds.
  4. Add the cut gourd chunks, roast in ghee for 5 minutes and then add malai and coconut powder.
  5. Now when the bottle gourd is cooked and browned, add the milk.
  6. Cook till the gourd is 95 pcent done and then add sugar.
  7. Cook further as the sugar dissolves.
  8. Garnish with chopped pistachios.
  9. Serve hot.
