ABOUT Gobi Aloo Matar Bengali style RECIPE

Stir fried cauliflower, potato and green peas with spices. No onion or garlic.

Ingredients Serving: 2

  1. 1 Cup - Cauliflower florets cut in medium size
  2. 1 - Potato cut in small cubes
  3. 1/2 Cup - Green peas (I have used frozen)
  4. 1/2 tsp - Ginger paste
  5. 1 - Bay leaf
  6. 1/2 tsp - Panch Phoron
  7. 1 - Tomato chopped
  8. 1/4 tsp - Turmeric powder
  9. 1/2 Tsp - Cumin Powder
  10. Coriander powder 1/2 tsp
  11. Salt
  12. 1 tbsp - Chopped coriander leaves

Instructions

  1. Blanch cauliflower, potato pieces and green peas for 5-6 mins on high heat in a pan full of salted water. Keep the lid on.
  2. Heat oil in a nonstick pan. Add bay leaf , ginger paste and panch phoron. Saute for a minute in medium heat.
  3. Add turmeric powder, cumin powder, coriander powder, chilli powder, green chilli, salt and a teaspoon of water. Saute for 1-2 minutes.
  4. Add chopped tomatoes. Cook for 2_3 mins or until tomatoes are soft.
  5. Now add blanched vegetables and stir fry for 7-8 minutes.
  6. Cover and cook for 2-3 minutes more. Garnish with chopped coriander.
  7. Serve hot with roti or rice.
