ABOUT Eggless Spinach Muffins RECIPE

A healthy and nutritious muffin recipe that is made with the goodness of Spinach and multi-grain atta that is perfect for breakfast when you are ready to just grab and go. And can also be packed in kids lunch box. Best way to incorporate greens in their diet.

Ingredients Serving: 12

  1. Dry ingredients : 220 gm - All Purpose Flour
  2. 80 gm - Multi-grain atta
  3. 7 gm - Baking powder
  4. 3 gm - Baking soda
  5. Wet ingredients : 130 gm - Yogurt
  6. 100 gm -Sugar
  7. 160 gm - Milk
  8. 60 gm - Oil
  9. 100 gm - Spinach
  10. 2 ripe - Bananas
  11. Add-ons : 50 gm - Dried Cranberries
  12. 50 gm- Walnuts

Instructions

  1. Sieve the dry ingredients together and keep aside.
  2. In a blender, add all the wet ingredients except for Bananas and blend until smooth. Mash bananas separately using a fork and add to the wet ingredients.
  3. Add the wet ingredients to the dry in two stages and combine well. Add the add ons and give a quick mix.
  4. Add 2 scoops of the batter in a muffin tin that is lined with paper cups.
  5. Bake in a pre-heated oven at 190°Celsius for 18-20 mins or until a skewer comes out clean. Cool and serve.
