ABOUT Dhokli nu shaak RECIPE

This is a quick and spicy kathiawadi vegetable dish which is relished with hot fulkas or rotlas.Gram flour dumplings made in curd based gravy.

Ingredients Serving: 4

  1. For the dhokli:
  2. Besan-1 &1/2 cup
  3. water-1 cup
  4. Salt
  5. Asafoetida-1/4 tsp
  6. Soda-1 pinch
  7. For the gravy:
  8. Buttermilk-2 & 1/2 cups
  9. Salt
  10. Besan-1/2 tsp
  11. Turmeric-1/4 tsp
  12. Chilli powder-1 tsp
  13. Coriander Powder-1 tsp
  14. Ginger paste-1/2 tsp
  15. Garlic paste-1/2 tsp
  16. Cumin Seeds-1 tsp
  17. Carom seeds-1 tsp
  18. Curry leaves-8 to 10
  19. Coriander for garnishing

Instructions

  1. Take water in a vessel and keep to boil.Add salt and asafoetida.
  2. When water boils add soda.
  3. Then add besan to the boiling water.Reduce flame to sim.
  4. Now hold vessel with tongs and stir with wooden rolling pin.
  5. Put off gas and take the vessel down on platform and mix thoroughly such that no lumps are remaining.
  6. Now put this in greased thali.
  7. Level it with hand properly.
  8. Cut into square pieces.
  9. Now take oil in a pan.After it heats add cumin and carom seeds.Add curry leaves andginger paste.
  10. Now add garlic paste,turmeric,salt,chilli powder and coriander powder.
  11. Saute for 30 seconds and add buttermilk in which 1/2 tsp besan is blended.
  12. Let it boil.Stir continuously so that it doesn't curdle.
  13. After 3 to 4 minutes add the dhoklis.
  14. Mix and cook for about 10 minutes.
  15. After 10 minutes you will see that dhoklis float up.
  16. Now garnish with coriander and serve hot with rotis.
