ABOUT Gosht Beliram.... RECIPE

Meat Beli Ram is a legendary delicacy from Punjab and it is said to have been prepared by a great chef Beli Ram . Beli Ram was supposed to have been the head chef in the kitchens of Maharaja Ranjit Singh of Patiala . Meat Beli Ram is a favourite that can be found on dhaba menus , specially along the highways of Punjab . There are no tomatoes added and the sourness comes from the yoghurt . If you feel like the yoghurt is not very strong , add a little more of it .

Ingredients Serving: 5

  1. Mutton (on the bone ) 500 gms
  2. Salt to taste
  3. Ginger paste - 100 gms
  4. Garlic paste -100 gms
  5. Turmeric - 2 tsp
  6. Coriander Powder - 2 tbsp
  7. Cumin powder - 1 tbsp
  8. Red Chilli Powder - 2 Tsp
  9. Kasoori methi powder - 2 tsp
  10. Onions - 1 cup
  11. Browned onions - 1 cup
  12. Pounded coriander seeds - 2 tbsp
  13. Pounded black pepper - 1 tbsp
  14. Yoghurt - 500 gms
  15. Small green chillies - 2
  16. Oil - 200 ml

Instructions

  1. Peel and slice the onions .
  2. Whisk the yoghurt till it is smooth and creamy .
  3. Place mutton in a thick bottomed handi . Add all the ingredients and mix well .
  4. Keep aside to rest for 10 mins .
  5. Put the same handi on fire and cook till a boil comes .
  6. Now lower the heat and cover the mutton with a lid and slow cook till the mutton is tender .
  7. Serve hot with chapati .
