ABOUT Tofu’s Egg with potato curry RECIPE

Unlike the usual egg curry available at restaurants , I gave a twist by presenting this tofu’s egg with potato curry. In general , paneer is used but as it is a dairy product , I preferred protein rich tofu as it is a plant product and healthier than paneer. Also Tofu is cholesterol free and can be consumed even by diabetics, lactose intolerants etc.

Ingredients Serving: 4

  1. Tofu – 250 grams
  2. Potato (medium size ) -3
  3. Sliced Onion – 1 cup
  4. Soaked and Peeled Almond- 5
  5. Grated coconut – 1 cup
  6. Garlic cloves – 2
  7. Cumin and coriander powder – 1 teaspoon
  8. Clove – 1
  9. Ginger – 1 inch piece
  10. Cardamom – 1
  11. Cinnamon – 1 inch thickness
  12. Red chilly powder ( for adults ) – 1.5 teaspoon
  13. Rice flour- 1/2 cup.

Instructions

  1. Boil potatoes and peel off the skin once cooked.
  2. Now mash it in a vessel. Then heat oil in a pan. Add the mashed potatoes, turmeric powder,salt, cumin and coriander powder one after the other. Mix it well over a low flame until it turns golden color.
  3. Make the above mix into small round shaped balls.
  4. Immerse tofu in a bowl of water and clean it well. Drain the water and make the tofu into a smooth paste in a dry mixie jar.
  5. Add rice flour , salt to the above tofu paste. Mix it well with a spoon.
  6. Apply oil to your palm and make shallow shaped cups of tofu paste.
  7. Then insert potato balls into those shallowed shaped tofu cups.
  8. Cover the shallow cups on all sides and make oval shape.
  9. Now heat oil in a pan over medium flame.
  10. In the meanwhile,roll the tofu eggs in little amount of rice flour.
  11. Carefully transfer these rolled tofu eggs in the hot oil and fry till they turn slight brown in color.
  12. Preparation of Gravy – Make a paste of all the spices , grated coconut , soaked and peeled almonds and 1/2 cup of sliced onions.
  13. Heat oil in a pan. Add the rest half cup of onion slices.Once these turn translucent, add the ground paste. Mix it well until it doesn’t stick to the pan.
  14. Now add turmeric powder,salt, red chilly powder (optional).Mix it well.
  15. To this pour one cup of water.Boil for two or three minutes. Then carefully put the fried tofu eggs into it.
  16. Serve hot with chapathi/dosa or rice.
