Ingredients Serving: 6

  1. Basmati rice half kg
  2. sugar 1 cup
  3. Clarified ghee half cup
  4. Kevda essence 1 teaspoon
  5. Cherry 5 teaspoon
  6. Cardamom6
  7. Cinnamon sticks 2
  8. Clove6
  9. Kishmish 1tbsp
  10. Kesar 6/7strands
  11. Yellow colour 2drops
  12. Khoya grated 250grams
  13. Silver pearls1tsp
  14. For moti kalajam
  15. Khoya 250gm
  16. Paneer 75gm
  17. Maida 75gm
  18. Sugar 2cups
  19. Water 1cup
  20. oil to fry
  21. Cardmom powder 1tsp
  22. Rose water 1tbsp
  23. Silver foil


  1. Take a big bowl add rice in it wash two times and soak in water for 1/2hour
  2. Now boil 10cup water in a wide open pan and yellow color in it add rice in it.cook for 80%.and drain all water
  3. Now take a pan add ghee in it .add cardamom , clove ,cinnamon stick stir for a minute .
  4. Now add sliced coconut and all dryfuits one by one.
  5. Now add 1/4cup water in the same pan.cook for 5minute .add sugar in it .let sugar desolve .
  6. Now add half cooked rice add grated khoya and cherry mix well .
  7. Cover the pan with foil and cook in very low flame for 15 minutes.
  8. Now switch off the gas flame .
  9. Now take a pan add sugar and water in it .boil it reduce till one strand appears add cardamom and rose water in it ..keep aside this sugar syrup.
  10. Take a wide plate mash paneer with your palm make it so soft .
  11. Now mash khoya and make it smooth. And soft .
  12. Now add paneer, khoya, maida and make a smooth dough .take very small balls from it like grapes .
  13. Meanwhile heat oil in a pan .
  14. Fry all balls one by one till golden dark brown color appears.
  15. Soak all these balls in the sugar syrup .
  16. Take them out after 15min.
  17. Cover these moti kalejam with silver foil.
  18. Assembling of shahi moti sweet jarda
  19. Plate jarda in a bowl garnish with cherry ,silver pearls,and with moti kakejaam.
  20. So your shahi moti jarda is ready to serve .
