ABOUT Peerkangai / Ridge Gourd Dosa RECIPE

Peerkangai dosa is an inviting dosa that attracts everybody by its appearance and taste. This dosa belongs to Udupi cuisine and it does not need any special side dish since it already has everything in it!!. No doubt children will get excited by seeing this dosa. Ingredients Serving: 4

  1. Par boiled rice / Idli rice 2 cups
  2. Tamarind a small lemon size
  3. jagerry 2 table spoons
  4. Salt to taste
  5. Asafoetida powder 1/2 tea spoon
  6. Thinly sliced Ridge gourd pieces 20
  7. For roasting:
  8. Dhania / Coriander seeds 1 tb spoon
  9. Urad dal 2 tea spoons
  10. Chana dal 2 tea spoons
  11. Dhania / Coriander seeds Cumin seeds 1/4 tea spoon
  12. Red chillies 5

Instructions

  1. Heat a pan with 2 tea spoons of oil and fry to golden brown all the items together and keep aside.
  2. Wash the rice and soak in water for three hours.
  3. After three hours add the tamarind,jagerry and roasted items to the rice and grind to smooth batter in a wet grinder or mixer.
  4. Add required salt and asafoetida powder.
  5. Mix well and set aside for two hours
  6. Let the batter be slightly watery than our regular dosa batter. 
  7. Heat the dosa tawa and grease with the oil.
  8. Dip the Ridgegourd slices one by one into the batter and place them on the dosa tawa and form a round shape with the dipped circles.
  9. Smear some oil around. Cover the tawa with a lid. Let the dosa and the vegetable get cooked in medium flame for 2 minutes.
  10. Then take out the lid and gently flip off the dosa.
  11. Once the other side is also cooked well and both the sides becomes crispy, take the dosa out from the tawa.
  12. The Ridge gourd dosa is ready to serve  now and enjoy it with curd.
