Ingredients to make Cheese masala dosa

  • rice 2 cups
  • Dosa: urad dal 1/2 cup
  • Dosa: Toor dal 3 tbsp
  • Dosa: Channa dal 3 tbsp
  • Dosa: Flattened rice/ Poha 1/4 cup
  • Dosa: sugar 1 tbsp
  • Dosa: butter
  • Dosa: salt as per taste
  • Filling: potato 4 numbers
  • Filling: onion 2 numbers
  • Filling: Green chilli 4 numbers
  • Filling: coriander leaves one handful
  • Filling: curry leaves 4 numbers
  • Filling: Channa dal 1 tsp
  • Filling: urad dal 1 tsp
  • Filling: mustard seeds 1/2 tsp
  • Filling: turmeric 1/8 tsp
  • Filling: oil 2 tsp
  • Grated cheese 1/2 cup

How to make Cheese masala dosa

  1. Soak rice, all the dals mentioned under dosa section in water for 4 hours
  2. Grind the soaked mixture into a smooth mixture
  3. Allow the ground mixture to ferment for about 8 hours (overnight)
  4. Add sugar and salt
  5. For potato filling, boil potatoes until done
  6. In a pan, heat some oil
  7. Add mustard seeds, channa dal and urad dal and give it a good fry
  8. Add chillies, onion and fry till onions are transparent
  9. Add boiled and mashed potato and mix well
  10. Add turmeric, salt, chopped coriander and mix well
  11. Heat dosa pan
  12. Add a ladle of batter and spread it in circular motions
  13. After a few seconds, spread some butter and allow it to cook for 2 mins
  14. Add the grated cheese and potato filling and allow the cheese to melt
  15. Once done, roll the dosa and remove from pan
  16. Serve with hot sambar and coconut chutney

My Tip:

Adding sugar to the batter results in browning of dosa
