ABOUT Batata vada RECIPE

Batata Vada is a popular Maharashtrian street food and liked by most of the people in Maharashtra. It can be eaten as a breakfast or lunch or an evening snack. Usually serves hot with Pav, fried green chilies, dry garlic chutney, green or tamarind chutney or sometimes sambar. It tastes best with fried green chili and dry garlic coconut chutney.

Ingredients Serving: 4

  1. Potatoes - 2 large
  2. Curry leaves – 5-6
  3. Coarsely ground coriander seeds – 1tsp
  4. Cumin seeds – 1/2tsp
  5. Mustard seeds- 1/2 tsp
  6. Garlic cloves – 8-9 finely chopped
  7. Green chili – 2tbsp finely chopped
  8. Ginger grated – 2tbsp
  9. Turmeric powder – ½ tsp
  10. Garam masala – 1tsp
  11. Coriander leaves – finely chopped
  12. Oil – 1tbsp for tadka + Oil for frying
  13. For Gram Flour or Besan Batter – Gram Flour or Besan – 1cup
  14. Turmeric powder – ½ tsp
  15. Green masala mixture(garlic, chili, ginger) – 1 tbsp
  16. salt as per taste
  17. Water as required to prepare batter

Instructions

  1. Wash, boil potato in a pressure cooker up to 3-4 whistle. Let it cool.
  2. Once cooled, peel potatoes. Cut into small cubes and keep aside
  3. In a pan heat oil, add cumin and mustard seeds. Let it splutter.
  4. Add Coarsely ground coriander seeds. fry for few seconds.
  5. Add whole Curry leaves, finely chopped Onion. Stir onion till translucent.
  6. Blend garlic, Ginger, chili in a blender without adding any water. Add blended green masala mix keeping 1tbsp for batter mixture into onion mixture.
  7. Keep stirring until raw aroma of green masala goes off
  8. Now add dry masalas, Turmeric powder, garam masala, red chili powder and salt. Mix well.
  9. Add potatoes. Mix well until it incorporates with masala mixture.
  10. Stir for 2-3 minutes. Remove. Keep aside
  11. Make besan or gram flour mixture adding little water at a time. Mixture should be little thick and coat batata vada.
  12. Add salt, remaining green masala mixture. Mix well.
  13. Make balls out of potato filling and dip them into the batter. Coat well from all the sides
  14. Heat oil in a wok or kadai. Fry vadas on medium low flame till they turn golden brown.
  15. Drain excess oil and place them on tissue paper.
  16. Serve hot with sliced onion, fried green chilly or with Pav or buns.
