Fried ice- cream, a favourite mexican dessert. One has to be very quick while preparing and serving this recipe. It is crunchy from outside and creamy from inside.

Ingredients Serving: 4

  1. 1 quart vanilla ice cream
  2. 1 cup crushed frosted cornflakes
  3. 1 cup sweetened coconut flakes or 1chopped walnuts, or 1cookie crumbs
  4. 2 large eggs
  5. 2 tablespoons sugar
  6. Vegetable oil for frying
  7. Hot chocolate sauce optional
  8. whipped cream optional

Instructions

  1. With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap. Freeze for at least 2 hours.
