ABOUT Zafrani Chicken ( A Creamy Treat) RECIPE

Zafrani Chicken is a treat to your taste buds and eyes. It's yummy in taste and looks so delicious when you serve that you will have one full bowl in first serving only. The addition of Milk, Almonds, Cream Saffron and Yogurt makes it rich in look and taste both.

Ingredients Serving: 4

  1. Marinated Chicken 750 grams ( leg piece / chopped chicken in big chunks.)
  2. Onions 4 large
  3. Milk 1 cup ( warm)
  4. Water 1 cup ( warm)
  5. Ghee / Clarified butter 3 tablespoons + 2 tablespoons
  6. Garlic crushed 2 teaspoons
  7. Ginger grated 2 teaspoons
  8. Green chillies chopped slits ( length wise) 3 to 4
  9. Tomato blanched and blended 1/2 cup
  10. Curd / yogurt 1 cup
  11. Saffron strands 7 to 8
  12. Fresh Cream 2 tablespoons
  13. Almonds 15 to 20
  14. Cloves 3 + 5( for garnish)
  15. Cardamom whole 2 to 3
  16. Bay leaves few
  17. Coriander powder 1 tablespoons
  18. Garam masala 1 teaspoon
  19. Parsley dried / fresh coriander leaves for garnishing.

Instructions

  1. Chop the onions.
  2. Heat a big pan, add ghee and add chopped onions.
  3. Saute till brown, turn off gas, take onions out in a plate. Drain excess ghee and let cool. Transfer drained ghee to the pan.
  4. Now in the same pan add 2 tablespoon ghee. Add cloves, cardamom. Add chopped green chillies.
  5. As it splutters add bay leaves, ginger, garlic, coriander powder and garam masala.
  6. Give it a stir and add marinated chicken pieces. Stir fry them for 3 to 4 minutes. Cover to cook.
  7. Mix warm milk, water and curd well. Add to the chicken when chicken is half cooked.
  8. Let the Chicken cook for 3 minutes more. Meanwhile blend sauted onions and almonds, tomato puree and make a fine paste.
  9. Add this paste to the gravy, cover and cook. Mix saffron strands in warm milk and add to the gravy.
  10. Now let everything cook together for a while. Till that time your chicken is cooked and gravy has become thicker.
  11. Adjust salt, add fresh cream to the chicken, simmer for a minute and turn the gas off.
  12. Serve with garnish of 3 to 4 cloves, bay leaves and dried parsley or coriander leaves.
