ABOUT Khubaani / Zardaalu Ka Custard RECIPE

Our Kokanis special again, lovely creamy egg custard, sweetened by juicy khubaani/zardaalu /Apricots in sugar chaasni. Very classic mild sweet dessert !:thumbsup:

Ingredients Serving: 4

  1. For custard ::
  2. 3 cups Milk
  3. 1 tablespoon Maida
  4. 1 Egg
  5. 1 teaspoon vanilla essence
  6. For the Topping ::
  7. 1 cup washed deseeded Apricots /Zardalu /Khubaani
  8. 1 1/2 cup Sugar
  9. 3 cups Water
  10. Some almonds to garnish

Instructions

  1. Keep all ingredients ready for custard.
  2. Cut open and wash clean the apricots too and keep aside.
  3. Put milk to boil, add little vanilla essence.
  4. Now whisk the egg, add maida to this and blend both well.
  5. Add this mix ready to the milk, keep stirring well to avoid lumps on slow flame and cook for 5-7 minutes.
  6. Keep the water to boil now for sugar syrup/ chaasni add a thread of saffron.(optional)
  7. As it starts boiling, add the washed apricots/khubaani.
  8. Cook for 4-5 minutes.
  9. It's to look like this when done.
  10. Now remove the ready custard sauce in a bowl.
  11. To serve pour out custard in transparent bowls.
  12. Now on this custard add topping of the apricots/khubani chaasni.
  13. Serve as it is or cold as per choice.
  14. The bland custard is complemented by the sugary apricots/khubanis.
  15. Garnish with dry fruits of choice (optional).
