ABOUT Sukku Paal RECIPE

This is a hot drink with a nice aroma of dry ginger and the sweetness of palm candy. This is very good for digestion and also for sore throat. Nowadays it's a routine to serve this after dinner in Tamil marriages to enhance good digestion after the feast.

Ingredients Serving: 6

  1. Milk 1 litre
  2. Dry ginger or sukku (Tamil) 25 grams
  3. Palm candy or panangkalkandu (Tamil) 100 grams
  4. Peppercorns 10
  5. Saffron few strands for garnishing

Instructions

  1. Dry roast the dry ginger till it becomes fluffy.
  2. Dry roast the pepper corns.
  3. Grind the dry ginger and pepper corns into fine powder and sieve them to remove the coarse fiber.
  4. Boil the milk.
  5. Then add palm candy to the boiling milk and let it dissolve.
  6. Then add the ground powder and let the milk boil well.
  7. Switch off when it has reduced to 750 millilitre approximately.
  8. Sprinkle the saffron strands and give it a stir.
  9. Serve hot and enjoy the flavourful sukkupaal and the benefits of palm candy.
