ABOUT Maangai Thokku / Raw Mango Preserve RECIPE

Maangai thokku is kind of pickle/chutney made using raw mangoes. The mangoes are grated and cooked in oil and various spices until it forms a nice chutney like mix. This thokku can be used with rotis/dosas or even mixed with hot rice and ghee and eaten.

Ingredients Serving: 3

  1. 1 raw mango peeled and grated
  2. 4 to 5 tablespoon oil
  3. salt as per taste
  4. few curry leaves
  5. 2 to 3 teaspoons red chilli powder
  6. 1 teaspoons haldi powder
  7. 1/2 teaspoons methi powder
  8. 2 teaspoons rasam powder
  9. 1/4 teaspoons asfoetida/hing
  10. 1 teaspoon mustard seeds


  1. Peel a raw mango and grate it finely.
  2. In a kadai heat the oil and splutter the mustard seeds
  3. Once the mustard seeds have spluttered well, add the curry leaves and hing and fry well.
  4. Add the grated mango along with salt, haldi and red chilli powder and mix well such that all the spices are coated well over the mangoes.
  5. Keep on low flame and cook until the mangoes are soft and tender.
  6. Add the rasam powder and methi powder, mix well.
  7. Keep stirring occasionally to prevent from burning.
  8. After some time the oil starts oozing out from the sides and the mangoes are cooked really well.
  9. It forms a nice mass and we can get a nice aroma and the oil will be seen floating on top.
  10. Turn off the stove now and let it cool completely before you transfer it to an air tight container.
  11. Do not close the container until the thokku is cooled completely.
  12. You can store this in the fridge for almost 4/5 months.
