ABOUT Peach-Melba pancakes ( eggless ) RECIPE

Peach Melba is a famous ice cream dish of grilled peaches and raspberry sauce served with icecream. I just added wheat pancakes to the icecream to make it a wholesome platter for kids. Children love pancakes and ice cream, so combine them with fruits and make it easier for the kids to love fruits too.

Ingredients Serving: 2

  1. Raspberries. heaped. 1 cup
  2. Sugar. 1 tablespoon
  3. Lemon juice. 2 teaspoon
  4. Butter. 4 tablespoons
  5. Oats. 1/4 cup
  6. Brown Sugar. 1/3 cup
  7. Whole wheat flour. 1 cup
  8. Egg replacement powder. 1 teaspoon (heaped)
  9. Flaxseed powder. 1 tablespoon
  10. Coconut oil. 1 tablespoon
  11. Milk. 1/3 cup
  12. Vanilla Essence. 1 tablespoon
  13. Cinnamon powder. 2 teaspoon
  14. Water to make a batter.
  15. Tinned peaches. 6-8 slices
  16. Vanilla Ice cream. 6-8 scoops
  17. Salt

Instructions

  1. Dissolve egg replacement powder in 1 tablespoon water and keep aside for 10 minutes
  2. Dissolve flaxseed powder in 3 tablespoons warm water and blend well to make flax eggs
  3. Heat a pan, warm the oats slightly. Cool.
  4. Powder the oats and brown sugar together
  5. Sieve wheat flour
  6. Add to oats-sugar mixture
  7. Add cinnamon powder.
  8. Whisk together coconut oil, flax egg, egg replacement mixture, vanilla Essence and milk till well blended
  9. Add the flour-oats-sugar mixture, a pinch of salt till slightly thick and lumpy
  10. Use water to adjust consistency. Cover and keep aside
  11. Heat pan, add a tablespoon of butter, add raspberries(halved) and lemon juice and a pinch of salt
  12. Cook till mushy and cool
  13. Blend to a smooth purée.
  14. Heat a mini Uthappa pan, add butter, pour the dough in each of the compressions
  15. Cook on both sides till lightly golden.
  16. Cool as we are serving with icecream
  17. Heat a grill pan, add a little butter, place the peaches and grill slightly till lines appear and cool
  18. Take a serving plate, place the pancakes, the grilled peaches, a scoop of icecream and drizzle the raspberry sauce on top.
