In Gujarat Kathiyavadi dish is very popular. There are many things in it. Like bajara na rotla, ringan no Oddo, athanu, tadela marcha ,dungli and Lagan ni chatni.. These are Gujarati names of it. Here I am presenting all things in one dish.

Ingredients Serving: 2

  1. Brinjal 4 pieces
  2. Tomatoes 2 pieces
  3. Spring onions 4 pieces
  4. Garlic paste 4 table spoons
  5. Pearl Millet flour means bajara ka flour 2 bowl
  6. salt as per taste
  7. Chilli powder 1 table spoon
  8. Haldi [turmeric] powder pinch of
  9. Water as per required
  10. Chilli 3 piece
  11. Mango pickle 1 tea spoon
  12. Oil 2 table spoons
  13. cumin seeds and mustard seeds [1 tea spoon , each]
  14. Sugar 1/2 table spoon
  15. White butter 1 table spoon

Instructions

  1. For ringan odo:
  2. Take Brinjal. Grease it with oil, put it on gas as low flame let the outer layer get charred. Do it again with all Brinjals.
  3. Now take out their skin and chopped it .
  4. Heat some oil in a pan, add mustard seeds and cumin seeds. let them crackle.
  5. Add the onion and tomatoes.
  6. Add that chopped Brinjals ,add garlic paste and chilli powder, turmeric powder.
  7. Add sugar and salt just for taste.
  8. This is ready to be served.
  9. For bajara na rotlo :
  10. Take flour add salt in it.
  11. Using water and knead a dough.
  12. Make the rotla by using hands and saute in tava.
  13. It is ready to be served by using while butter.
  14. Serve these both with spring onion, garlic paste, mango pickle and fried chillies.
