ABOUT Khatti meethi RECIPE

Sweet and sour mango chutney, a lovely accompaniment that can be served with some just parathas on the side.

Ingredients Serving: 10

  1. Raw mango - 1kg
  2. Sugar - 1kg
  3. Panch foran - 1tsp Jeera Rai Kalonji Methi Saunf (Methi to be used in lesser amount compared to other 4 spices)
  4. Vegetable Oil - 2tsp
  5. Dried red chillies - 2
  6. Bay leaves - 2
  7. Black Salt - 1/2 tsp
  8. Common salt - 1/2 tsp
  9. Food color - A pinch of color or turmeric

Instructions

  1. Peel the raw mangoes and deseed them.
  2. Cut into medium pieces and grind these pieces into coarse mixture. Do not make a paste.
  3. Heat the kadhai and add oil.
  4. After oil is heated add panchforan.
  5. Add dried red chillies and bay leaves.
  6. Add the raw mango mixture, black salt and common salt.
  7. Stir and put on low flame. Cover the kadhai and let it cook for 10-15 minutes. Keep checking in between so that it does not stick to the bottom.
  8. Then add sugar and keep stirring for around 10-12 minutes. No lumps should be formed so we need to keep mixing it continuously on low flame.
  9. Once sugar melts and mixture takes a thick texture,( not very thick) add food colour or a pinch of turmeric.
  10. Mix it thoroughly and switch off the flame.
  11. Serve hot or cool (as preferred) with stuffed parantha.
